Ingredients

Nuts and Seeds

  • 145 gms Almonds
  • 130 gms Cashew nuts
  • 120 gms Pistachios (without shell, unsalted)
  • 35 gms Melon seeds
  • 35 gms Poppy seeds
  • 15 gms Fennel seeds

Spices

  • 20 Green cardamom pods
  • 20 Black peppercorns
  • 1 tsp Cinnamon powder

Other Ingredients

  • 30 gms Sultanas
  • 200 gms Dark chocolate (70% cocoa)
  • 100 ml Boiling water
  • 100 gms Desiccated coconut

Instructions

  1. Soak Sultanas: Soak the sultanas in boiling water for approximately ten minutes to soften them, making them easier to blend into a paste.
  2. Grind Nuts and Seeds: Grind the almonds, pistachios, cashews, and melon seeds individually into a fine powder for a uniform texture in the bliss balls.
  3. Grind Cardamom and Peppercorns: Peel the cardamom pods and grind them along with the black peppercorns into a fine powder to release their aromatic flavors.
  4. Grind Poppy Seeds: Gradually grind the poppy seeds into a powder, adding seeds little by little to achieve a consistent fine texture.
  5. Combine Dry Ingredients: In a bowl, mix all the powdered ingredients including the cinnamon powder thoroughly to ensure an even distribution of spices and nuts.
  6. Create Sultana Paste: Blend the soaked sultanas into a rough paste and add it to the bowl of powdered ingredients. Mix well to combine all components evenly.
  7. Roll Bliss Balls: Pinch out 30 gram portions of the mixture and carefully roll each portion into a smooth ball shape to prepare for coating.
  8. Melt Dark Chocolate: Set a pot of water to simmer and place a heatproof bowl over it (double boiler method). Add the dark chocolate to the bowl and gently melt until smooth.
  9. Prepare Coconut Coating: Spread the desiccated coconut on a plate or bowl nearby to use as a coating for the bliss balls after chocolate dipping.
  10. Finish Chocolate: Once melted, stir the chocolate into a smooth liquid, then turn off the heat and keep the bowl over the water bath to maintain the melted state.
  11. Coat Bliss Balls: Using a fork, dip each bliss ball into the melted chocolate thoroughly, remove excess chocolate, then roll the chocolate-coated balls in desiccated coconut to cover evenly. Sprinkle additional coconut if needed for full coverage.
  12. Chill and Set: Transfer the chocolate-coated bliss balls to the fridge to cool and allow the chocolate coating to set completely. Once firm, the bliss balls are ready to serve and enjoy.

Notes

  • If preferred, you can substitute dark chocolate with semi-sweet or milk chocolate based on taste preferences.
  • The nuts and seeds should be ground finely but not into a paste to preserve slight texture in the bliss balls.
  • The black peppercorns add a mild heat and should not be omitted for authentic Thandai flavor.
  • Store finished bliss balls in an airtight container in the fridge for up to one week for freshness.
  • Use gluten-free dark chocolate to keep the recipe gluten-free if needed.
