Ingredients

Batter

  • 1.5 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tbsp Poppy seeds
  • Zest and juice of 1 lemon
  • 1/2 cup + 2 tbsp Sugar
  • 2 Eggs
  • 1/2 cup Oil
  • 1/4 tsp Lemon oil
  • 1/2 cup Milk

Lemon Glaze

  • 1/3 cup Powdered sugar
  • 1-2 tbsp Lemon juice

Instructions

  1. Preheat and prepare pan: Set your oven to preheat at 180°C (350°F) and grease an 8×4 inch loaf tin to prevent sticking.
  2. Mix dry ingredients: Sift together the flour, baking powder, baking soda, and salt into a bowl. Whisk in the poppy seeds and set aside.
  3. Make lemon sugar: Zest the lemon and rub the zest into the sugar to infuse it with bright lemon flavor.
  4. Beat wet ingredients: In a larger bowl, beat the eggs and lemon-infused sugar together until light, creamy, and pale, about 3 to 4 minutes.
  5. Add liquids: Pour in the oil, lemon juice, and lemon oil into the egg mixture and mix well to combine.
  6. Combine dry and wet: Add half of the dry ingredients to the wet mixture and stir gently to combine.
  7. Add milk: Pour in the milk and mix well to integrate all ingredients.
  8. Add remaining dry ingredients: Add the remaining dry ingredients and mix just until no dry streaks remain; avoid overmixing to keep the bread tender.
  9. Bake the bread: Pour the batter into the prepared loaf tin and bake at 180°C (350°F) for 35-40 minutes, or until a skewer inserted in the center comes out clean.
  10. Cool the bread: Allow the bread to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  11. Prepare glaze: Mix the powdered sugar and lemon juice until smooth and lump-free, achieving a thick but pourable consistency.
  12. Glaze and serve: Drizzle the lemon glaze over the cooled bread and let it set for 5 minutes before slicing and serving. Enjoy!

Notes

  • For best results, use fresh lemons for zest and juice to maximize flavor.
  • Do not overmix the batter once the wet and dry ingredients are combined to keep the bread moist and tender.
  • You can substitute milk with a dairy-free alternative to accommodate dietary preferences.
  • If lemon oil is unavailable, you can omit it or add a small amount of lemon extract instead.
  • Ensure the bread is completely cool before glazing to prevent the glaze from melting.
