Ingredients

Wet Ingredients

  • 3 very ripe bananas (the riper, the better)

Dry Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/4 cup ground flaxseed
  • 1 teaspoon baking soda

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350˚F (175˚C) and line a loaf pan with parchment paper or use a nonstick loaf pan to prevent sticking.
  2. Mash bananas and mix wet ingredients: In a medium or large bowl, mash the bananas with a fork or potato masher, leaving some small chunks for texture. Add the maple syrup, unsweetened apple sauce, and vanilla extract to the mashed bananas and stir until thoroughly combined.
  3. Combine dry ingredients and mix: In a separate bowl, whisk together the whole wheat flour, ground flaxseed, baking soda, baking powder, cinnamon, and salt. Add the dry ingredients to the wet banana mixture and fold gently until just combined, maintaining a thick, slightly lumpy batter similar to pancake batter. Avoid overmixing to keep the bread tender.
  4. Pour and bake: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for 45-50 minutes or until a knife or toothpick inserted into the center comes out clean. Oven temperatures may vary, so check for doneness accordingly.
