Ingredients

For the Brioche

  • 90 g all-purpose flour (3.2 oz., 2/3 cup)
  • 12 g white granulated sugar (0.42 oz., 1 Tablespoon)
  • 2 g salt (0.07 oz., 1/3 teaspoon)
  • 50 g egg, without the shell (1.8 oz., 1 large egg)
  • 50 g unsalted butter, diced, softened at room temperature but still cold (1.8 oz., 3 and 1/2 Tablespoons)
  • 10 g Swedish pearl sugar (0.35 oz., 3/4 Tablespoon), or to taste

For the Syrup

  • 50 g water (1.8 oz., 3 and 1/3 Tablespoons)
  • 50 g white granulated sugar (1.8 oz.,1/4 cup)

For the Mousseline Cream

  • 180 g whole milk (6.3 oz., 3/4 cup)
  • 2 large egg yolks (about 35 g, 1.2 oz.), at room temperature
  • 40 g white granulated sugar (1.4 oz., 3 and 1/2 Tablespoons)
  • 18 g cornstarch (0.63 oz., about 2 and 1/3 Tablespoons)
  • 40 g unsalted butter, diced and softened at room temperature (1.4 oz., 3 Tablespoons)
  • 1/2 teaspoon vanilla extract
  • 1/2 Tablespoon orange blossom water (7 g/0.25 oz.), or to taste (optional)
  • 40 g unsalted butter, diced and softened at room temperature to about 16-18°C (61-64°F) (1.4 oz., 3 Tablespoons)

To Serve

  • 10 g shelled pistachios, chopped (0.35 oz.) (optional)

Instructions

  1. Activate Yeast: Crumble fresh yeast into a small cup and pour cold milk over it without stirring. If using instant yeast, sprinkle it over the milk. Set aside for 5-10 minutes to activate while preparing other ingredients.
  2. Combine Dry Ingredients: In a stand mixer bowl with paddle attachment, combine flour, sugar, and salt. Stir briefly with a wooden spoon to mix evenly.
  3. Mix Dough Base: Dissolve yeast mixture with a fork, then pour over the flour mixture along with the egg. Mix on low speed about 3 minutes until a dense, elastic dough forms. Scrape bowl as needed.
  4. Incorporate Butter: Add diced butter gradually in six additions while mixing on low speed, ensuring each addition is fully absorbed before adding the next. This process takes about 5 minutes. Increase speed to medium-low and continue mixing for 10-15 minutes until dough passes the windowpane test, indicating proper gluten development.
  5. Shape and First Rise: Shape dough into a ball, place in a 2-cup measuring container or back in mixing bowl, cover with cling film, and let rise in a warm, draft-free spot until almost doubled (about 3 hours).
  6. Prepare Pan and Shape Loaves: Grease and line a 15 cm (6 inch) springform pan with parchment paper. Gently punch down dough and divide into 7 equal pieces (~28 g each). Shape each into a smooth ball and arrange in the pan as a flower (one center ball surrounded by six). Cover loosely and let rise for 90 minutes to 2 hours until puffy.
  7. Preheat Oven and Bake Brioche: Preheat oven to 180°C (356°F) conventional. Uncover brioche, brush surface with leftover egg white wash, sprinkle with pearl sugar, and bake for 13-15 minutes until golden and internal temperature reaches about 88°C (190°F). Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
  8. Make Syrup: In a small saucepan, combine water and sugar. Heat over medium, stirring until sugar dissolves. Boil for about 1 minute, then remove from heat and let cool.
  9. Prepare Pastry Cream: Heat milk until steaming. Whisk egg yolks and sugar together, then mix in cornstarch until smooth. Gradually pour hot milk into egg mixture, whisking constantly. Return mixture to saucepan and cook over medium heat, whisking until thickened and bubbling for 30 seconds. Remove from heat.
  10. Finish Pastry Cream: Whisk in 40 g butter until melted and smooth, then add vanilla extract and orange blossom water. Transfer to a wide container, cover surface with parchment or cling film to prevent skin, cool at room temperature 10-15 minutes, then chill until about 16-18°C (61-64°F), approx. 30 minutes.
  11. Make Mousseline Cream: Transfer pastry cream to a mixing bowl and beat on low speed to loosen (2-3 minutes). Gradually add remaining 40 g softened butter in five additions, whipping until silky, glossy, and able to hold shape (about 10 minutes). Transfer to a piping bag fitted with a decorative tip and chill until ready to use.
  12. Assemble Tropezienne: Slice cooled brioche horizontally in half with a cake leveler or knife. Place bottom half on plate, brush with desired amount of syrup. Pipe mousseline cream evenly over the layer, sprinkle with chopped pistachios if using. Brush top half lightly with syrup and place over cream. Chill about 1 hour for clean slicing or serve immediately. If chilled, let sit 10 minutes at room temperature before serving to soften brioche.
