Turkey Pinwheel Sandwiches are a quick and delicious appetizer or snack featuring soft lavash bread rolled with a creamy ranch yogurt spread, sliced turkey breast, cheddar cheese, and fresh butter lettuce. These bite-sized pinwheels are perfect for parties, lunchboxes, or a light meal, offering a flavorful and easy-to-make option that serves up to 24.

Ingredients

Spread

  • 4 oz reduced fat cream cheese (softened)
  • ¼ cup plain full fat Greek yogurt
  • 1 ½ Tablespoons ranch seasoning mix

Pinwheels

  • 4 large sheets lavash bread or flatbread
  • 8 oz sliced turkey breast
  • 8 slices cheddar cheese or American cheese
  • 1 cup butter lettuce
  • Optional veggies: tomato slices, bell pepper slices, carrot sticks, or cucumber matchsticks
  • Salt and pepper (to taste)

Instructions

  1. Make spread: In a small bowl, thoroughly mix the softened cream cheese, plain full fat Greek yogurt, and ranch seasoning mix until smooth and well combined to create a flavorful spread.
  2. Spread: Evenly distribute the ranch yogurt mixture over each sheet of lavash bread, leaving a small border around the edges to prevent the filling from spilling out when rolling.
  3. Add fillings: Layer slices of turkey breast evenly over the spread on each lavash. Add two slices of reduced-fat cheddar cheese per sheet, then top with butter lettuce leaves. If desired, add optional veggies like tomato slices or cucumber matchsticks and season lightly with salt and pepper.
  4. Roll: Starting at one edge, tightly roll each lavash sheet into a log shape to encase the fillings securely.
  5. Cut: Using a sharp knife, slice each log into approximately 1-inch thick pinwheels to create individual sandwich bites.
  6. Serve: Arrange the pinwheels neatly on a serving platter and enjoy immediately. These can also be chilled briefly for a firmer slice.

Notes

  • Use reduced fat cream cheese and cheddar cheese to keep the pinwheels lighter.
  • Lavash bread works best for easy rolling and slicing; substitute with any large, thin flatbread if unavailable.
  • Optional vegetables add freshness and crunch; customize according to preference.
  • For a lower sodium version, use a low-sodium ranch seasoning or prepare your own blend.
  • Pinwheels can be made ahead and refrigerated for up to 24 hours, covered tightly to maintain freshness.
