This Vegan Apple Galette is a rustic, flaky pastry filled with spiced apples, baked to golden perfection. Made with a simple vegan butter crust and a sweet, cinnamon-ginger apple filling, it’s a perfect dessert for fall or any occasion. The galette is beautifully topped with turbinado sugar for a caramelized finish and best served slightly warm with vegan vanilla ice cream or coconut whipped cream.

Ingredients

For the Crust

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted vegan butter, cut into cubes
  • 4-6 tablespoons ice cold water

For the Filling

  • 3 large apples
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Juice from 1/2 lemon
  • 2 teaspoons cornstarch
  • 1/2 teaspoon vanilla extract

For the Topping

  • 1 tablespoon vegan butter, melted
  • 1 tablespoon turbinado sugar
  • Vegan vanilla ice cream (for serving)
  • Coconut whipped cream (for serving)

Instructions

  1. Prepare the crust dough: In a food processor, pulse together the flour, sugar, and salt. Add the cold vegan butter cubes and pulse until the mixture resembles coarse crumbs with no large chunks of butter remaining.
  2. Add ice water and form dough: Gradually add the ice cold water one tablespoon at a time, pulsing after each addition until a dough ball begins to form. You may not need all the water. If the dough remains crumbly, add more water carefully to achieve a workable dough.
  3. Chill the dough: Transfer the dough onto a lightly floured surface and gently form it into a ball without overworking, to keep it flaky. Place the dough ball in a bowl, cover, and refrigerate for 30 minutes to an hour for best results.
  4. Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking.
  5. Prepare the apple filling: Peel, core, and halve the apples. Slice into 1/4-inch thick pieces. In a mixing bowl, combine the sliced apples with brown sugar, ground cinnamon, ground ginger, lemon juice, cornstarch, and vanilla extract. Toss gently until the apples are fully coated with the mixture.
  6. Roll out the dough: Remove the dough from the refrigerator and place it back onto a lightly floured surface. Roll it into a roughly 12-inch diameter circle. Transfer the rolled dough carefully onto the prepared parchment-lined baking sheet.
  7. Assemble the galette: Arrange the coated apple slices in a circular pattern over the dough, leaving a 2-inch border around the edges. Slightly overlap the apple slices as you go, keeping the excess juices in the bowl.
  8. Fold and decorate the crust: Fold the 2-inch border dough up and over the edges of the apple filling, pleating every 3 inches to create rustic folds. Brush the folded dough with the melted vegan butter and sprinkle turbinado sugar evenly over the crust.
  9. Bake the galette: Place the baking sheet in the preheated oven and bake for 35-40 minutes or until the crust is golden brown and the apples are soft and bubbly.
  10. Cool and serve: Allow the galette to cool for about 10 minutes before slicing. Serve warm wedges topped with vegan vanilla ice cream or coconut whipped cream for a delightful treat.
