These Vegan Home Fries are crispy, flavorful, and perfect for a hearty breakfast or brunch. Made with simple ingredients like russet potatoes, vegan butter, and a blend of spices, they deliver a diner-worthy taste and texture with an easy stovetop cooking method. The recipe includes helpful tips for boiling the potatoes to just the right softness before pan-frying to achieve the perfect crunch, making them a great addition to any meal or a delicious side dish on their own.

Ingredients

Potatoes

  • 4 – 5 russet potatoes, peeled (about 1.5 pounds)
  • ¾ tsp salt (divided)

Seasonings & Coating

  • 1 ½ – 2 tbsp vegan butter
  • ⅛ tsp black pepper
  • 1 tsp arrowroot starch or cornstarch
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Prepare Potatoes: Peel the potatoes and cut them into quarters or halves if smaller. Avoid cutting them too small to prevent excess water absorption when boiling.
  2. Boil Potatoes: Place the potatoes in a medium pot with cold water and ½ teaspoon salt. Bring to a boil, then reduce heat to prevent boiling over and partially cover. Boil for 8-10 minutes until they are soft but not mushy. Drain and let cool enough to handle.
  3. Cut Potatoes: Carefully cut the boiled potatoes into smaller pieces. Small crumbly bits are ideal as they become crispy when cooked.
  4. Melt Butter & Add Potatoes: Melt the vegan butter in a skillet, add the potatoes, and sprinkle with the remaining salt and black pepper.
  5. Add Starch: Sprinkle the arrowroot starch or cornstarch over the potatoes and stir gently until fully coated and no starch is visible.
  6. Season Potatoes: Add garlic powder and smoked paprika, then toss to coat the potatoes evenly. Spread them in a single layer in the skillet for even browning.
  7. Cook Until Crispy: Cook for about 10 minutes, flipping occasionally, until all sides are nicely browned and crispy.
  8. Freeze Instructions (Optional): To freeze leftovers, spread the home fries in a single layer on a sheet pan lined with parchment or a silicone mat. Freeze for about 2 hours, then transfer to an airtight container or freezer bag. To reheat, cook frozen fries in a hot skillet for about 10 minutes. They crisp up well with only minimal texture change.

Notes

  • Do not cut potatoes too small before boiling to avoid soggy texture.
  • Use vegan butter for a rich flavor and crispy finish.
  • Arrowroot starch or cornstarch helps create a crispy crust on the fries.
  • Cooking in a single layer ensures even browning and crispiness.
  • Freezing leftover fries is convenient and they reheat well in a skillet.
