Ingredients

Sushi Rice

  • 2 cups uncooked sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp white sugar
  • 1/2 tsp salt (+ more for seasoning)

Seafood Mixture

  • 1 lb shrimp (shells removed and chopped)
  • 1 lb salmon
  • 1/2 tsp cracked black pepper (for the salmon)
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup Kewpie mayo + more for topping
  • 2 teaspoons Sriracha sauce (or more to taste)

Toppings & Garnishes

  • Furikake (Japanese rice seasoning)
  • Seaweed snacks (for serving)
  • Toasted sesame seeds (for topping, optional)
  • 1 bunch green onion (green section chopped)

Instructions

  1. Cook the Sushi Rice: Cook sushi rice according to package instructions. This creates the base of the sushi bake with perfectly tender and sticky rice.
  2. Prepare Vinegar Mixture: Combine rice vinegar, sugar, and salt in a small saucepot over heat. Stir until sugar and salt dissolve completely, then place the pot in a bowl of cold water to cool.
  3. Season the Rice: Pour the chilled vinegar mixture into the cooked rice and gently fold to combine. Set the seasoned rice aside to allow flavors to meld.
  4. Cook the Salmon: Season the salmon with salt and cracked black pepper. Either air fry at 400°F for 10 minutes or bake in the oven at 400°F for 12 minutes until cooked through. Once cooked, flake the salmon into bite-sized pieces.
  5. Mix Seafood Filling: In a large bowl, combine the chopped shrimp, flaked salmon, cream cheese, Kewpie mayo, and Sriracha. Mix until smooth and evenly blended. Adjust Sriracha to your preferred spice level.
  6. Preheat Oven and Prepare Baking Dish: Preheat the oven to 400°F and grease or lightly oil a 9×13 inch baking dish.
  7. Assemble Sushi Bake: Spread the seasoned sushi rice evenly into the baking dish, pressing gently to flatten the surface. Sprinkle a generous amount of furikake over the rice.
  8. Add Seafood Mixture: Spread the shrimp and salmon mixture evenly on top of the rice layer, pressing gently and smoothing the surface to create an even layer.
  9. Bake: Bake the assembled sushi bake in the oven at 400°F for 10 to 15 minutes to warm through and meld flavors.
  10. Broil for Finish: Switch the oven to broil and broil the sushi bake for 3 to 5 minutes until the top is golden and bubbly. Watch carefully to avoid burning.
  11. Add Final Toppings: Remove from oven and drizzle more Kewpie mayo and Sriracha on top. Sprinkle additional furikake, toasted sesame seeds, and chopped green onions for vibrant color and texture.
  12. Serve: Scoop portions of the sushi bake and wrap with seaweed snacks, enjoying it like hand rolls for a fun, shareable dish.

Notes

  • Rice vinegar mixture cools to prevent sogginess when mixed into the rice.
  • Adjust Sriracha amount to control the spice level of the seafood filling.
  • Salmon can be cooked in the air fryer or oven depending on preference and equipment.
  • Ensure sushi rice is properly cooked and sticky for the best texture.
  • Using Kewpie mayo lends authenticity and creaminess that balances the spicy seafood.
