Ingredients

  • 3 tablespoons honey
  • 1 tablespoon dark brown sugar

  • 5 cups 1-inch seedless watermelon cubes or melon balls
  • 3 cups 1-inch cantaloupe cubes or melon balls

Instructions

  1. Toast the Pistachios: Place a small nonstick pan over medium heat. Add the roughly chopped pistachios and toast them for 2 to 3 minutes, stirring frequently with a wooden spoon until they become fragrant. This intensifies their flavor and adds a delightful crunch to the salad.
  2. Prepare the Honey-Lime Syrup: In the same pan, add honey and dark brown sugar, warming the mixture over medium heat while continuously stirring for about 1 minute until the sugar fully dissolves. Remove the pan from heat and stir in the grated lime zest and freshly squeezed lime juice. Let the syrup cool for 5 minutes. Taste the syrup and add extra honey if you prefer a sweeter dressing.
  3. Assemble and Serve: In a large, shallow serving bowl, combine the watermelon and cantaloupe cubes. Drizzle the honey-lime syrup evenly over the fruit and sprinkle the toasted pistachios on top. Toss gently if desired and serve immediately to enjoy fresh and crisp flavors.
