Ingredients

Proteins and Vegetables

  • 1 pound chicken tenderloins
  • 1 pound red potatoes (cut in 1/2 inch wedges)
  • ½ large red onion (cut into 1-inch cubes)
  • 1 lemon (thinly sliced)

Seasonings and Oils

  • 3 tablespoons olive oil
  • Juice from 1 lemon
  • 2 cloves garlic (minced)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic salt
  • ½ teaspoon kosher salt
  • ½ teaspoon crushed red pepper
  • ½ teaspoon black pepper
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for baking the foil packet evenly.
  2. Prepare the foil packet: Line a baking dish with a large sheet of aluminum foil, allowing enough to wrap around the ingredients entirely and create a packet with some space for steam to vent.
  3. Toss the main ingredients: In a large bowl, combine the chicken tenderloins, red potato wedges, diced red onion, and thin lemon slices. Drizzle with olive oil and toss well to coat all ingredients evenly.
  4. Add the seasonings: Pour in the lemon juice and sprinkle the minced garlic, dried Italian seasoning, garlic salt, kosher salt, crushed red pepper, and black pepper over the mixture. Toss again to ensure everything is well-seasoned and coated.
  5. Assemble the packet: Transfer the chicken, potatoes, onion, and lemon mixture to the center of the foil sheet, spreading it out evenly. Top with additional lemon slices if desired.
  6. Seal and vent the packet: Fold the sides of the foil up and over the ingredients, sealing the edges securely but leaving enough space at the top for steam to vent as the food cooks.
  7. Bake until cooked: Place the foil packet in the preheated oven and bake for 40-50 minutes or until the potatoes are tender and the chicken reaches an internal temperature of at least 165°F (74°C).
  8. Garnish and serve: Carefully open the foil packet to avoid steam burns, garnish with fresh chopped parsley if using, and serve hot.

Notes

  • Ensure to cut potatoes evenly for uniform cooking.
  • Use a meat thermometer to verify chicken is fully cooked.
  • You can add other vegetables like bell peppers or zucchini if desired.
  • The crushed red pepper can be adjusted based on preferred heat level.
  • For easier cleanup, you can place the foil packet on a baking sheet.
