These patties are easy to prepare, versatile, and can be cooked in the oven or air fryer for a crispy golden crust. Ingredients

Main Ingredients

  • 1 lb salmon (cooked and flaked)
  • 2 large eggs
  • 1/4 cup mayonnaise (or plain Greek yogurt)
  • 3/4 cup Panko breadcrumbs
  • 1 1/2 cups diced bell peppers
  • 1/4 cup diced red onion
  • 3 tbsp finely chopped fresh dill
  • 2 tsp Old Bay seasoning
  • 1 dash Tabasco (or other hot sauce, optional)
  • 2 tbsp olive oil

For Serving

  • Tartar sauce
  • Lemon wedges

Instructions

  1. Preheat the oven: Set your oven to 425°F to ensure it reaches the right temperature for baking the patties to a perfect golden brown.
  2. Prepare the salmon: In a large bowl, break the cooked salmon into bite-sized pieces or flake canned salmon thoroughly, ensuring no large chunks remain.
  3. Mix ingredients: Add eggs, mayonnaise (or Greek yogurt), Panko breadcrumbs, diced bell peppers, red onion, dill, Old Bay seasoning, and Tabasco (if using) to the salmon. Gently mix all ingredients with your hands or a spatula until just combined to maintain a good texture.
  4. Form patties: Shape the mixture into 6 evenly sized patties, making them compact but not overly dense to ensure even cooking.
  5. Bake the patties: Lightly oil a baking sheet and place the salmon patties on it. Bake in the preheated oven for 15 minutes. Then, flip the patties and bake for an additional 5 minutes until both sides are crispy and golden brown.
  6. Alternatively, air fry: Place patties in the air fryer tray lined with parchment paper if preferred. Spray the tops with cooking spray for extra crispiness. Cook using the air fry setting at 390°F for 10-12 minutes until fully cooked and golden brown on both sides.
  7. Serve: Remove the patties from the oven or air fryer and serve hot with lemon wedges and tartar sauce for dipping. Enjoy!

Notes

  • Note 1: Use freshly cooked salmon or well-drained canned salmon for best results.
  • Note 2: You can customize the diced bell peppers by using a mix of colors for visual appeal and added flavor.
  • For a lighter option, substitute mayonnaise with plain Greek yogurt.
  • Adding a dash of hot sauce is optional but adds a nice kick to the patties.
