Ingredients

Doughnut Batter

  • 4 tablespoons salted butter, melted
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup strawberry jam
  • 1/2 cup milk
  • 2 cups whole wheat pastry flour (or all-purpose flour)
  • 1 tablespoon freeze dried strawberry powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Strawberry Glaze

  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 2-3 tablespoons freeze dried strawberry powder
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 6-cup doughnut pan or a 12-cup muffin pan generously with melted butter to ensure the doughnuts release easily after baking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, eggs, vanilla extract, honey or maple syrup, strawberry jam, and milk until the mixture is smooth and well combined.
  3. Add Dry Ingredients: To the wet mixture, add the whole wheat pastry flour, freeze dried strawberry powder, baking powder, baking soda, and kosher salt. Stir gently until just combined to avoid overmixing and to keep the batter light and airy.
  4. Fill the Pan and Bake: Evenly divide the batter into the prepared doughnut or muffin pan, filling each cup about halfway to two-thirds full. Bake in the preheated oven for 10-12 minutes, or until the doughnuts are set and a toothpick inserted into the center comes out clean. Remove from the oven and allow them to cool for 5 minutes in the pan.
  5. Release Doughnuts: Run a knife around the edges of each doughnut to loosen them from the pan carefully, then invert the pan to release the doughnuts onto a cooling rack. Let them cool completely before glazing.
  6. Make the Strawberry Glaze: In a bowl, combine the cream cheese, powdered sugar, freeze dried strawberry powder, hot milk, and vanilla extract. Mix until smooth and creamy, adding extra milk as needed to reach a dippable consistency.
  7. Glaze the Doughnuts: Dip the cooled doughnuts into the glaze or drizzle it over the tops. Allow the glaze to set for about 5 minutes before serving.
  8. Enjoy: Serve the doughnuts fresh as a delightful snack or breakfast treat. Store any leftovers in an airtight container.

Notes

  • For best results, use fresh freeze dried strawberry powder for natural flavor and color.
  • You can substitute whole wheat pastry flour with all-purpose flour if preferred.
  • The glaze can be adjusted for sweetness by adding more or less powdered sugar.
  • Ensure doughnuts are fully cool before glazing to prevent melting the icing.
  • These doughnuts keep well for up to 2 days at room temperature or can be refrigerated for longer freshness.
