Ingredients

Wet Ingredients

  • 2 ripe bananas
  • ¾ cup plain Greek yogurt (nonfat or low-fat)
  • 2 cups almond milk (or any milk of choice)
  • 2 teaspoons vanilla extract
  • 2 tablespoons honey or maple syrup
  • 2 large eggs (room temperature)

Dry Ingredients

  • 2 cups old-fashioned oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt

Fruit

  • 2 cups blueberries (fresh or frozen)

Optional Toppings

  • Greek yogurt
  • Aerated whipped topping
  • Toasted nuts
  • Ground cinnamon
  • Additional fresh blueberries

Instructions

  1. Preheat the oven: Set your oven to 375°F and allow it to fully preheat to ensure even baking.
  2. Prepare the dish and mash bananas: Lightly mist a 9- x 13-inch casserole dish with oil spray to prevent sticking. Place the ripe bananas in the dish and mash them thoroughly.
  3. Combine wet ingredients: Add Greek yogurt, almond milk, vanilla extract, honey or maple syrup, and the eggs into the dish with mashed bananas. Crack eggs directly into the dish but whisk them well with a fork before mixing them into the other wet ingredients. Mix and mash everything together until the batter is as smooth as possible, though some lumps are acceptable.
  4. Add dry ingredients and blueberries: Incorporate the oats, ground cinnamon, baking powder, kosher salt, and fresh or frozen blueberries into the wet mixture. Stir everything gently until the ingredients are evenly distributed.
  5. Bake the oatmeal: Place the casserole dish in the preheated oven and bake for approximately 55 minutes, or until the oatmeal is set and golden on top.
  6. Cool and serve: Remove the baked oatmeal from the oven and let it cool slightly. Slice into large squares and garnish each serving with optional toppings like extra Greek yogurt, fresh blueberries, a dollop of whipped topping, a sprinkle of cinnamon, or toasted nuts.

Notes

  • Using room temperature eggs helps the ingredients combine more smoothly.
  • Frozen blueberries can be used without thawing; just fold them in carefully to avoid staining the batter.
  • For a dairy-free version, substitute Greek yogurt with plant-based yogurt and use a suitable milk alternative.
  • To make this vegan, replace eggs with flax eggs and use maple syrup instead of honey.
  • Make sure not to overmix the batter to keep the texture tender.
  • Store leftovers in the refrigerator for up to 4 days and reheat before serving.
