Ingredients

For the Black Bean Filling

  • 1 tbsp olive oil (plus extra for frying)
  • 3 cloves garlic, minced
  • 800 g tinned black beans, drained and lightly rinsed
  • 2 tbsp tomato paste
  • 1 tbsp chipotle paste
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 0.5 tsp cayenne pepper

For Assembling

  • 100 g shredded mozzarella cheese
  • 8 mini tortilla wraps

Instructions

  1. Sauté Garlic: Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the minced garlic and sauté for 2-3 minutes until fragrant and lightly golden.
  2. Add Pastes: Stir in the tomato paste and chipotle paste to the garlic. Cook the mixture for 1-2 minutes, allowing the pastes to deepen in color and release their aroma.
  3. Cook Beans with Spices: Add the drained black beans along with smoked paprika, cumin, dried oregano, onion powder, and cayenne pepper. Stir well to combine, then let the mixture cook for 4-5 minutes to meld the flavors.
  4. Mash Beans: Using a potato masher or fork, mash about two-thirds of the black bean mixture, leaving some beans whole for texture.
  5. Assemble Tacos: Spread the black bean mixture over one half of each mini tortilla. Sprinkle shredded mozzarella over the beans, then fold each tortilla in half to form a taco.
  6. Fry Tacos: Heat a little olive oil in the pan over medium heat. Fry each taco for approximately 2 minutes per side, or until the tortillas turn golden and the cheese melts, creating a crispy exterior.
