  • 4 cups of 100% fruit juice (such as peach-mango fruit & veggie blend, blueberry-pomegranate, or passion fruit)
  • 2 tablespoons unflavored beef gelatin (such as Vital Proteins or Great Lakes; do NOT substitute collagen or protein powder)
  • 2 tablespoons honey, agave syrup, or cane sugar (optional)

Instructions

  1. Bloom the Gelatin: Pour 1/2 cup of the juice into a small bowl or liquid measuring cup. Sprinkle the gelatin powder evenly over the juice surface and stir to combine. Let it sit for about 5 minutes until the mixture thickens considerably and appears grainy.
  2. Heat the Remaining Juice: While the gelatin blooms, pour the remaining 3 1/2 cups of juice into a medium saucepan. Heat it over medium-high heat until the liquid is steaming hot but not boiling or simmering.
  3. Melt the Bloomed Gelatin: Add the optional honey, agave, or cane sugar to the hot juice, then stir in the bloomed gelatin. Stir thoroughly until all the gelatin has completely dissolved to ensure a smooth final texture.
  4. Set the Jello: Pour the gelatin mixture into a 2-quart ceramic pan or any heatproof container such as an 8×8, 9×9, or 11×7 inch dish. Cover with plastic wrap to prevent condensation and refrigerate for at least 3-4 hours until fully set.
  5. Serve and Store: Once set, cut into pieces and serve chilled. Store leftovers in the refrigerator and consume within 4-5 days for optimal flavor and texture, though it remains safe up to 7-10 days.
