Ingredients

Fruits

  • 6.5 oz mango (approximately 1 cup chopped, fresh or frozen)
  • 6 oz pineapple (approximately 1 cup chopped, fresh or frozen)

Liquids and Flavoring

  • 1 cup coconut milk
  • 2 Tbsp lime juice (juice of 1 lime)

Instructions

  1. Prepare the fruit: If using fresh mango or pineapple, peel and chop them into chunks or cubes to make blending easier. If using frozen fruit, simply measure the quantities required, no prep needed.
  2. Blend all ingredients: Add the chopped or frozen mango, pineapple, coconut milk, and lime juice into a blender. Blend on high speed until the mixture is completely smooth and creamy.
  3. Serve or store: Pour the smoothie into glasses and enjoy immediately for the best taste and texture. If you have leftovers, store them in a sealed container or glass in the refrigerator. Stir gently before drinking again.

Notes

  • To cut a mango, score the fruit lengthwise and widthwise in the flesh around the pit, then scoop out the cubes.
  • For pineapple, slice off the top and bottom, remove the skin, and then chop into chunks.
  • This smoothie is best consumed fresh but can be stored for up to 24 hours refrigerated.
  • Adjust the lime juice to taste if you prefer more or less tartness.
