Ingredients

For the Dough

  • 1 cup White Whole Wheat Flour
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 Tablespoon Flax Seeds (optional)
  • 1 Tablespoon Hemp Seed Hearts (optional)
  • 1 cup Greek Yogurt (plain)
  • 1 Tablespoon Olive Oil (extra virgin)

Toppings

  • 1 Tablespoon Olive Oil (extra virgin)
  • 2 cloves Garlic (minced)
  • 1/2 cup Mozzarella Cheese (fresh)
  • 1/4 cup Goat Cheese (crumbled)
  • 1 12-ounce jar Artichoke Hearts (drained)
  • 2 Plum Tomatoes (sliced)
  • 1/4 cup Red Onion (thinly sliced)
  • 1/4 cup Orange Bell Pepper (thinly sliced)
  • 3 Tablespoons Pine Nuts

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pizza.
  2. Mix Dry Ingredients: In a large bowl, whisk together the white whole wheat flour, baking powder, salt, flax seeds, and hemp seed hearts (if using) until evenly combined.
  3. Make Dough: Stir in the Greek yogurt and 1 tablespoon of olive oil into the dry mixture. Knead the dough gently until it comes together into a cohesive ball.
  4. Roll Dough: On a lightly floured surface, roll out the dough into an 11-12 inch circle, ensuring an even thickness for baking.
  5. Prepare Baking Sheet: Transfer the rolled dough onto a baking sheet lined with parchment paper for easy handling and cleanup.
  6. Coat Dough: Brush the top of the dough evenly with the remaining olive oil and minced garlic to add flavor and help create a crispy crust.
  7. First Bake: Place the dough in the preheated oven and bake for 5 minutes to partially cook the crust before adding toppings.
  8. Add Toppings: Remove the pizza base from the oven. Evenly spread the fresh mozzarella, artichoke hearts, sliced plum tomatoes, red onion, and orange bell pepper over the crust.
  9. Add Cheese and Nuts: Sprinkle crumbled goat cheese and pine nuts on top of the vegetables and mozzarella to enhance texture and flavor.
  10. Final Bake: Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and vegetables are tender.
  11. Broil (Optional): For a golden-brown finish, broil the pizza for an additional 1 minute, watching carefully to prevent burning.

Notes

  • Use parchment paper to prevent sticking and make cleanup easier.
  • The flax and hemp seeds are optional but add extra nutrition and texture.
  • Broiling at the end is optional; keep a close eye to avoid burning the cheese.
  • You can substitute other vegetables of your choice for the toppings.
  • This pizza has a soft, slightly thick crust thanks to the yogurt-based dough.
