Using defrosted frozen peaches, it combines a tender fruit filling with a spiced, crunchy pecan oat topping. Baked to golden perfection and ideal served warm with whipped cream or vanilla ice cream, this classic crisp is bursting with warm cinnamon, cardamom, and nutmeg flavors.

Ingredients

Fruit Filling

  • 8 cups frozen peaches (defrosted and drained)
  • ½ lemon (juiced)
  • ⅔ cup granulated sugar
  • 3 Tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ½ tsp kosher salt

Crisp Topping

  • 1 ½ cups dark brown sugar
  • 1 ½ cups all-purpose flour
  • 1 cup old fashioned rolled oats
  • 1 cup toasted pecans (chopped)
  • 2 tsp ground cinnamon
  • 1 tsp cardamom
  • ½ tsp ground nutmeg
  • ½ tsp allspice
  • 1 cup salted butter (softened)

Instructions

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s ready for baking the crisp.
  2. Prepare the baking dish: Lightly grease a 9×13 inch cake pan with a little butter or use cooking spray for easy removal and to prevent sticking.
  3. Mix the fruit filling: In a large bowl, combine the defrosted and drained peaches with the fresh lemon juice, granulated sugar, cornstarch, vanilla extract, almond extract, and kosher salt. Stir gently to coat all the fruit evenly and set aside.
  4. Make the crisp topping: In a separate large bowl, whisk together the dark brown sugar, all-purpose flour, rolled oats, chopped toasted pecans, cinnamon, cardamom, allspice, and nutmeg. Add the softened salted butter, then mix using a wooden spoon until the mixture becomes crumbly and holds together.
  5. Assemble the crisp: Spread the prepared peach mixture evenly in the greased 9×13 baking dish. Sprinkle the crumbly topping evenly over the peaches to cover them completely.
  6. Bake the crisp: Place the assembled dish in the oven and bake for 40 to 45 minutes until the topping is nicely golden brown and the filling is bubbling around the edges.
  7. Cool before serving: Remove the peach crisp from the oven and allow it to cool slightly to let the filling set, making it easier to serve.
  8. Serve: Enjoy the crisp warm, topped with fresh whipped cream or vanilla ice cream. For extra flavor, sprinkle a dusting of ground nutmeg on each serving.

Notes

  • Defrost and drain the frozen peaches well to avoid excess liquid in the crisp.
  • To toast pecans, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and lightly browned.
  • For a nuttier topping, walnuts can be substituted for pecans.
  • Make sure the butter is softened but not melted to achieve the perfect crumbly topping texture.
  • Allow the crisp to cool for 10-15 minutes before serving to help the fruit filling thicken.
  • This dessert can be made a day ahead and reheated gently in the oven before serving.
