Ingredients

Waffle Batter

  • 1 ripe banana
  • 1/2 cup creamy peanut butter (ingredients: peanuts and salt only)
  • 1 egg
  • 1 1/2 cups gluten free rolled oats
  • 1 cup non-dairy milk (almond milk recommended)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons maple syrup (or more to taste)

Instructions

  1. Blend: Add all ingredients to a high speed blender and blend until smooth. You may need to add extra tablespoons of milk if the batter is too thick to blend easily, but keep the batter thick enough for fluffy waffles.
