Pizza Beans is a comforting and hearty dish featuring creamy cannellini beans simmered in a flavorful pizza sauce, topped with melted mozzarella cheese and fresh basil. Perfect for a quick meal, this recipe combines the savory taste of pizza with the wholesome goodness of beans.

Ingredients

Base

  • 1 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 small onion (diced)

Sauce and Beans

  • 400 g pizza sauce
  • 400 g canned cannellini beans (drained and rinsed)
  • Salt and pepper to taste

Toppings

  • 100 g shredded mozzarella cheese
  • 4-6 fresh basil leaves
  • 1 tbsp chili oil (optional)

Instructions

  1. Sauté Aromatics: Heat the olive oil in an oven-proof skillet over low heat. Add the diced onion and minced garlic, and sauté gently for 4-5 minutes until softened and fragrant.
  2. Add Sauce and Season: Pour in the pizza sauce, and season with salt and pepper. Stir well to combine with the onions and garlic. Allow the mixture to simmer for 5 minutes to meld the flavors.
  3. Add Beans and Simmer: Stir in the drained cannellini beans, mixing them thoroughly into the sauce. Continue simmering on low heat for 10 to 15 minutes until the sauce thickens.
  4. Add Cheese and Grill: Sprinkle the shredded mozzarella evenly over the top of the beans and sauce. Place the skillet under a grill (broiler) for 3-4 minutes until the cheese melts, bubbles, and turns golden brown.
  5. Garnish and Serve: Remove from heat, top with fresh basil leaves and drizzle chili oil on top if using. Serve immediately while hot and cheesy.
