Delicious and savory Slow Cooker Mississippi Steak Bites featuring tender sirloin, rich au jus gravy, and tangy pepperoncini peppers. This easy-to-make recipe delivers flavorful, melt-in-your-mouth steak bites perfect for a comforting meal, cooked to perfection in your slow cooker.

Ingredients

Main Ingredients

  • 2 tablespoons vegetable oil
  • 3 pounds sirloin steak, cut into bite-sized pieces
  • 1 cup unsalted beef stock
  • 1 packet au jus gravy mix
  • 1 packet dried ranch seasoning
  • 8 tablespoons unsalted butter, cut into tablespoons
  • 6 pepperoncini peppers

Instructions

  1. Sear the Steak: Heat a large skillet over medium-high heat and add half of the vegetable oil. In batches, sear the sirloin steak pieces until browned on all sides to lock in the juices. Transfer the seared steak pieces into an 8-quart slow cooker. Add more oil if needed between batches.
  2. Pour the Beef Stock: After all the steak has been seared and added to the slow cooker, pour 1 cup of unsalted beef stock evenly over the meat to provide moisture for cooking.
  3. Add the Au Jus: Sprinkle the packet of au jus gravy mix evenly over the steak and beef stock in the slow cooker to infuse rich, savory flavor into the dish.
  4. Add the Ranch Seasoning: Evenly sprinkle the dried ranch seasoning packet over the steak and au jus, adding an herby, tangy depth to the recipe.
  5. Lay on the Butter: Distribute 8 tablespoons of unsalted butter, cut into tablespoons, over the top of the steak mixture. The butter will melt into the sauce, enriching the flavor and texture.
  6. Add the Peppers: Place 6 whole pepperoncini peppers on top of the steak and seasonings to add a slight heat and acidity that brightens the dish.
  7. Slow Cook and Serve: Cover the slow cooker with the lid. Cook the steak bites on low for 3 to 4 hours or on high for 2 to 3 hours, until the beef is tender and infused with all the flavors. Serve immediately, spooning the cooking liquid as a rich au jus gravy over the steak bites.

Notes

  • Searing the steak before slow cooking helps seal in juices and enhances flavor.
  • Cooking times can vary depending on your slow cooker model; check for tenderness as you near the end of cooking.
  • Serve these steak bites over mashed potatoes, rice, or with crusty bread to soak up the delicious gravy.
  • For a spicier kick, add additional pepperoncini peppers or a splash of their juice.
