Ingredients

Strawberries

  • 1 ½ cups diced strawberries
  • 5 whole strawberries (for topping)
  • ¼ cup granulated sugar

Cream Cheese Mixture

  • 4 ounces cream cheese, softened to room temperature
  • ¼ cup powdered sugar
  • ½ cup whipped cream

Cake

  • 10 ounces angel food cake, diced into ½-inch cubes

Instructions

  1. Prepare Strawberries: Clean, hull, and dice 1 ½ cups of strawberries. In a bowl, combine them with ¼ cup granulated sugar and stir. Let the mixture sit for a few minutes to macerate and release juices.
  2. Make Cream Cheese Mixture: In a mixing bowl, cream together 4 ounces of softened cream cheese and ¼ cup powdered sugar. Gently fold in ½ cup whipped cream until fully combined and smooth. Transfer the mixture to a piping bag fitted with your preferred piping tip for easy layering.
  3. Prepare Cake Cubes: Dice 10 ounces of angel food cake into ½-inch cubes, perfect for layering in the cups.
  4. Assemble Layers: Begin by adding a layer of angel food cake cubes to the bottom of each mason jar, pressing gently to make a thicker layer if desired. Next, spoon 1 ½ to 2 tablespoons of the macerated diced strawberries over the cake.
  5. Add Cream Cheese Layer: Pipe the cream cheese mixture over the strawberry layer to form the third layer in each cup.
  6. Repeat Layers: Repeat the layering process by adding another layer of cake, diced strawberries, and cream cheese mixture to each jar.
  7. Top and Serve: Place one whole strawberry on top of each cup just before serving. Enjoy this fresh and creamy strawberry shortcake treat!

Notes

  • Store in the refrigerator in an airtight container or mason jar with a lid for 1-2 days; best enjoyed fresh.
  • If you don’t have a piping bag, simply spoon the cream cheese mixture over the strawberries and cake layers.
